    Rack of lamb...tellicherry pepper, himalayan pink salt, sherry wine, evoo -> cooked sous vide at 128F for 1.5 hours -> seared off in duck fat. Served with salad and scalloped potatoes.

    That sounds delicious. I just looked at some steaks earlier and it makes me want to eat some steak tartare.

    How did those filets come out? I like mine bloody rare.

    I love the himalayan salt...I buy the coarse stuff and grind it up a little more in my coffee grinder
    I see you love steak tartar...I almost have my steak like that...blue rare ...not chopped up though
    I am sure I would love it but haven't tried lol
    Roasting potato and parsnip in duck fat is awesome....try it sometime clark
    Oh yes....I had leftover pizza tonite !!!

    Steaks were awesome-medium rare. Grilling suasages tonight with a tomato and cucumber salad.
