    You should try it non-frenched. It's purely for looks. There is so much flavor in the meat/fat in between the rib bones. That meat is the best. It's a shame that it's thrown out for aesthetic reasons.

    I know all about that being Greek and doing whole lamb on the spit. Running a wholesale meat company and our clients demand it that way and I take a box home from time to time.
