    Wife and kids are gone tonight ...football is on, so chips and onion dip and hot spicey salsa and spicey canned sardines, and of course the cervezas.

    marinated (beef) flap meat, cooked sous vide at 130F for 7 hours, pan seared in olive oil 20 seconds each side, sliced against the grain and served over white rice.

    this is a really well marbled CHEAP cut of beef. it's delicious when marinated properly.
