I like to marinate with Balsamic, fresh garlic, and stuff with fresh jalepeno slices. (Use a knife to slice meat and stuff with garlic cloves and balsamic ). Then sear both sides using a charcoal and smoking wood. I take extra effort to make sure the fat side looks burnt. Of course this is done with flame, as to not over cook the center. Then I lower heat, remove briscuit, and take inside. Then I wrap on foil, cover in Italian dressing (add other spices to your liking), seal well, cook on low charcoal from 4-6 hrs, depending on the size. Turns out fork tender. That is the way I like it, but, there are many ways. Good luck, let us know how it turns out.

Oh forgot, after you seal in foil, ensure fat side is up. This will keep the meat moist.

I have never eaten the stuff fresh, the only way I have ever had it is when it is pickled. Of course the salt toughens it up so you need to boil the hell out of it. But a big, pot with some of that brisket corned beef, a large head of cabbage sliced and up along with a few potatoes cut in large chunks and let it simmer for a few hours and you have the perfect St Patrick Day feast :D
