Is there a setting that can be changed so that when scrolling through the guide it's not actually changing the channel in stb emu?

This has NOTHING to do with OK4. That all depends on the app that you are using.
On a BuzzTV box, you press the OK button or EPG button to bring up the channel list or EPG, and using your DPAD to move up and down does NOT change channels. If you want to change to a channel on the list, once you highlight it, you press OK again and only them will it change. Pretty sure STBEmu is the same when using it's channel list.
On BuzzTV, to make it even easier to scroll through channel, 1 page at a time, if you try to use the CH+ or CH- buttons on the remote when in the EPG or channel list, it will just scroll a whole page UP or DOWN. And only when you press OK while highlighting the channel you want, will it change to that.
So this has absolutely nothing to do with OK4.

STBEMU is the same. I just tried it. IF you press "OK" to get to the channel list, you can then use the UP/DOWN Direction pad to move up or down in the channel list, but it does NOT change channel, unless you hit ENTER. You need to hit the OK button first to get to the channel list (channel on left, with video stream preview on top right), and EPG on the bottom right). If you press up/down in full screen it will change channel. Keep in mind that this is an emulation of the MAG boxes, so this is not a "feature" that was defined by STBEmu :)
Are you using the latest version of STBEmu Pro (in one of the stickies in this forum) ?

Not sure why it's acting the way it does on mine. When I scroll through the channels it changes the channel to whatever channel I stop on without pressing ok. My friend is experiencing the same thing. I'm on the latest version of stb emulator. He is running an older version.

Are you scrolling, using the up/down direction pad, or the CH+/CH- buttons ?
And when you say you have the latest, STBEMU or STBEmu Pro 2.0.7 (don't think it makes a difference but just checking) ?

I'm using it on a firestick and Nvidia shield. There's only direction buttons. It is Stb emu pro. I am running ok2 and jio on the same app and it doesn't change the channel unless I press ok. Only acts this way with Ok4. Strange...

I have never tried OK4 specifically. I have tried it with OK2 and OK3 in the past, and it doesn't change (like you mention). Maybe something in the OK4 portal itself.
I don't use STBEmu any more, unless I am trying to emulate some other MAC address (to help friends), since I have plenty of BuzzTV boxes which make IPTV viewing experience a lot nicer compared to STBEmu.
Maybe someone else who has OK4 can test with STBEmu and report back.

OK, managed to replicate the issue on the OK4 portal and also found a way to change the behaviour in STBEmu.
Actually here is an illustrated guide, probably simpler than writing a bunch of instructions.

This seems to be a new option in the 5.6.8 portal version. OK2 (5.3.0 version) does not seem to have this option. I do like the option in this new portal that allows you to go to last TV channel that was playing, rather than the main menu every time.
To make it common as with other older portals, I "assume" that this default setting "Play in Preview only by OK" can be enabled as a default in the portal. But since I have not set one up before (server end), I will leave that to those who know.
But at least there is a simple way to change it.
NOTE: For some reason, I needed to do this twice. The first time I did it, it did not survive a restart of STBEmu (and I was afraid that may be because of some STB Emulation of NVRAM setting of the MAG box that it reset them every time I restarted). But I did it a second time and it has now survived a few restarts of STBEmu and 2 reboots of my box.

In STB you need to go to Settings in the main menu. Navigate to Portal and select "Play in preview only by OK(button)" If that is unchecked it will change channels as you scroll.

Hope they add that option to OK3.
IPGuys has had that option from the beginning. Goes directly to the last channel watched.
I have been using OK3 now for 2 weeks on STB Emu, It doesn't have that option in the settings, When I would reload or load the portal it would always bring me to the Main Menu.
Now today, when I reload portal I get the last channel I was watching. Did that a few times and same result which is cool. I checked the settings and no portal option/ Last TV Channel.
Wondering if anyone else has experienced this. Not complaining. I like this feature. Hope this is not a bug but feature that will continue on OK3.
Remembered your post and thought I'd share this.
OK2 never had this option though.

With most boxes it goes to last channel watched
You can submit various ticket from your panel
