is it possible and if so what switch layout would you need to set up a home with 5 birds/LNBS (standard dual output) and be able to get reception on multiple receivers (at least 3).

You need an 8 by 4 switch.

reccomend any... i saw the EMP 9x4, but seems overkill
what really looking for is to get all 5 birds to receiver 1 and 2. . and just birds 1 and 2 to go to receiver 3.

hardly overkill
you have a switch for future upgrades if wanted

The combination of switches needed to do that would cause too much system loss, the EMP 9x4 will do what you need.
The 9x4 switch is good for 4 lnb's, 2 lines in from each lnb plus one terrestial input.
I used to use emp 9x8 for 4 satellites on several receivers. On one receiver I wanted a 5th satellite, so I ran 2 lines from output of 9x8 switch to a 4x1 diseqc (ports 1 and 2) and used port 3 for the 5th satellite.
On the 9x8 switch I had it used diseqc 1, 22khz off for one sat, 22 khz on for second sat; diseqc 2, 22 khz on/off for 3rd and 4th sats.

But remeber, the more stuff you add to the system, the more dB loss you accumulate, this will lower the "S" and can affect the "Q", one switch will add 3 to 6 dB of loss, it adds up and you can cause problems with satellite reception.
An externally powered 9x4 switch is the best bet to counteract this.
